genesis_default_title is responsible for putting together the content of your title tag and enabling you to customize it in your admin area.
Genesis hooks this function to the WordPress native filter
wp_title like so:
add_filter( 'wp_title', 'genesis_default_title', 10, 3 );
Genesis automatically unhooks the function if your site is running an SEO plugin such as Yoast, but you can manually unhook it if you want to:
- revert to the WordPress default title tag
- replace the Genesis default title function with your own title-building function
- change the priority of the Genesis default title function.

Unhook the Genesis default title function and replace it with your own title-building function:
Change the priority of the Genesis default title function: (just replace 20 with your desired priority)
